Since 1951, Birkholm’s Bakery & Cafe has been a sweet staple in Solvang, California—founded by Carl “Cookie” Sr. and Charlotte Birkholm, and lovingly passed down through the generations. What began with traditional Danish recipes brought straight from Denmark has grown into a beloved, family-owned bakery known for its authenticity, hospitality, and irresistible baked goods.
In 1980, Carl Jr. and Elizabeth Birkholm proudly took the reins, continuing the family tradition and keeping “Cookie’s” original recipes at the heart of every treat. Fast forward to 2011, their son, Carl “Thomas” Birkholm, stepped into the kitchen—marking the third generation of Birkholms to rise with the early morning dough.
Today, Thomas and the Birkholm family continue to serve Solvang with hand-crafted pastries, breads, and café favorites made with love, skill, and a personal touch you won’t find anywhere else.
