The Space

Bar Le Côte’s interiors reflect the same balance of warmth and sophistication found on the plate. Rich green walls, handcrafted wood furnishings, and soft natural light create an inviting atmosphere that’s both refined and relaxed. Designed in collaboration with Helvey Design Studio, every detail — from the custom lighting to the handmade banquettes — was lovingly created to reflect the character of Los Olivos and the rhythm of the sea.

The result is a space that feels timeless and modern all at once. Perfect for an afternoon glass of rosé, an intimate dinner, or a lively evening with friends.

Our Story & Team

Chef Brad Mathews — Executive Chef & Co-Owner

Chef Brad Mathews brings a lifelong passion for the ocean to every dish he creates. Raised in the Finger Lakes region of New York, his culinary journey began with a deep respect for local ingredients. After working in Los Angeles under celebrated chefs and later at the Morro Bay Oyster Company, Brad developed a distinctive approach to seafood — soulful, sustainable, and full of heart.

At Bar Le Côte, Brad leads a talented team inspired by coastal flavors and classic technique. His creations, like the famed caviar cheesecake named one of the LA Times’ Best Bites of 2024, showcase his creative spirit and love of the sea.

Daisy & Greg Ryan — Co-Owners, Companion Hospitality

Founders of the acclaimed Bell’s in Los Alamos, Daisy and Greg Ryan bring their hospitality expertise and signature warmth to Bar Le Côte. Daisy, a Santa Ynez Valley native, and Greg, originally from Oregon’s Willamette Valley, honed their craft in New York and Los Angeles before returning home to create something special for the Central Coast.

Together with Chef Brad and Helvey Design Studio, they’ve built a restaurant that captures the heart of the region — rooted in community, designed with intention, and filled with genuine hospitality.

A New Model of Hospitality

Bar Le Côte is a service-included restaurant. A 20% service charge on each bill supports higher wages and health benefits for all non-management employees. This model ensures stability and equality across the team, from the kitchen to the dining room. Additional gratuities are optional and always appreciated.
