The Bear and Star continues their collaborative Chef’s Table Dinners with Chef Tim Hollingsworth of acclaimed Otium in Los Angeles. The five course tasting dinner featuring exquisite dishes in the Otium-style is staged in The Bear and Star’s state-of-the-art Chef’s Room and blends products raised on the Parker ranch with inspiration from Los Angeles, California.
The Chefs Table Dinner begins with Chef Tim Hollingsworth’s Radishes with Cured Egg Yolk, Local Sardines & Smoked Olive; followed by Abalone with Cauliflower, Capers & Brown Butter.
Next courses are Parker Wagyu Beef Tartare with Walnut, Lavash, Bulgur, Yogurt & Mint; Oak-Grilled Parker Ranch Texas Quail with Fava Bean Cassoulet & Foie Gras Glaze; and finally Parker Pasture-Raised Lamb with Tomato, Squash, Onion & Garlic to conclude the savory dinner. The evening is completed with dessert – Marigold Panna Cotta with Parker Ranch Honey & Basil. Expect stellar wine pairings from Santa Barbara County and beyond, curated by The Bear and Star’s General Manager Robert Williams.
