Chef’s Table Dinners with Chef Josiah Citirin of Melisse. The multi-course tasting dinner championing Southern California restaurant talent, staged in the Chef’s Room, blends products raised on the Parker ranch with inspiration from Los Angeles County.

Hamachi | kumquat, napa cabbage, smoked bonito. radish

Salt Roasted Carrot | seven seeds and fermented crab

Black Cod | green tomatoes, green garlic mussel broth

Lamb Rack and Shank | turnips, wild watercress

Goat Cheese Cake | guava, prickly pear, lemon curd
